Vegan date balls

Quick, easy and healthy snack or dessert!

2 cups nuts or seeds or nut butter (I’ve used any combo of pumpkin seed, sunflower seeds, chia seed, flax seed, walnuts, almond butter, tahini etc)

1 cup shredded coconut

2 cups pitted medjool dates

2 tbsp coconut oil

1/2 tsp salt

1 tsp vanilla

Dash of spices like cinnamon, ginger, etc.

Optional: cacao for rolling

Process the nuts/seeds/coconut in a food processor. Add the remaining ingredients except the cacao. Blend until it starts to clump up. Roll the batter into balls. You can roll in cacao if you want. Freeze for at least 1 hour on a tray or use a muffin tin. Keep in freezer or refrigerate.
